13) Deep-fried battered yams
What it is: Slices of yam, dunked in a light akara blend (see #2 above), or a plantain batter, and afterward pan fried.
Why it’s amazing: It’s carb-tacular goodness. Akara, boli (roasted plantains) and dundun (fried yams) are excellent (and tasty) road sustenances, however a mix of each of the three? Why not, yes please. Prepare with stew sauce, or a pepper stew.
