17) Ewa Agoyin
What it is: Smashed white or brown beans prepared with a pepper and palm oil sauce.
Why it’s great: This is an impeccable hot road sustenance. “Ewa” is “beans” in Yoruba and “Agoyin” is a reference to the Beninoise people people who started this dish. The beans are cooked until very soft (some say it must be pounded, others say its OK to have a couple of individual beans remain whole ) and unmistakable dark, smoky sauce has a palm oil base, with dried peppers, onions and a few individuals include ground crayfish. It tastes mystical.
